'Nduja is born in the heart of Calabria, in the small town of Spilinga, located at the foot of Mount Poro, in the province of Vibo Valentia. This area is the nerve center of 'nduja production, thanks to an ideal microclimate and the long peasant tradition passed down from generation to generation.

Its origins probably date back to the 16th century, when Calabrian farmers began to prepare sausages using the less noble parts of the pig, mixed with plenty of chili pepper, a fundamental ingredient both for flavor and for its natural preservative properties. The word itself, 'nduja, seems to derive from the French term "andouille", a salami introduced into the region during the Napoleonic period. However, over time, this product has become unique to Calabria, representing the essence of local cuisine.

How Calabrese 'Nduja is Made

The secret of 'nduja lies in its artisanal production, which guarantees its authenticity and inimitable quality.

  1. Meat selection : The base of 'nduja is made up of fatty parts of the pig, such as lard, bacon and guanciale. These cuts are carefully chosen to ensure the creamy and spreadable consistency that characterizes it.

  2. Calabrian chili pepper : The distinctive ingredient is the red chili pepper, sweet and spicy, dried in the sun and ground. In addition to giving the typical bright red color, the chili pepper plays an essential role as a natural preservative.

  3. Stuffing and maturing : The mixture is stuffed into natural casings, lightly smoked with local woods and then left to mature for a period ranging from 3 to 6 months. This process allows the 'nduja to develop its characteristic strong and complex flavour.
